Ingredients: 

1) Zucchini: only 3-5
2) virgin olive oil: only 1-2 tbsp 
3) Black pepper: as required
4) Cherry tomatoes: 02
5) Mozzarella balls, quartered if big: 01
6) Basil leaves: 1/4 c
7) Balsamic vinegar: 1-2 tbsp. 
8) kosher salt: as required


HOMEMADE CAPRESE ZOODLES


Method:


1) Using a spiralizer, create zoodles out of zucchini.
2) Add Zucchini in big bowl, add olive oil and season with salt and pepper. Let marinate only 10-15 minutes.
3) Now add tomatoes, mozzarella and basil to zoodles and mix until blended.
4) Serve after drizzle with balsamic
