Let’s start some delicious Bitter Gourd recipes.

1) Sweet and Sour Bitter Gourd

Ingredients:
  • Bitter Gourd: 1 kg
  • Curry leaves: 3
  • Cumin seeds: 1 teaspoon
  • Green chilies: 2
  • Chopped small onion: 1
  • Ginger: 1 teaspoon
  • Garlic: 1 teaspoon
  • Coriander: 1 teaspoon
  • Turmeric powder: ½ teaspoon
  • Red chili powder: ½ teaspoon
  • Mango powder: 1 teaspoon
  • Salt: as required
  • Cooking Oil: 3 tbsp

Method:
  • First wash all ingredients
  • Cut halves the Bitter Gourd from top and tail and remove all seeds from inside with the help of spoon.
  • Heat oil in a pan, add Curry Leaves, Cumin Seeds, and Green Chilies. After 5 minutes, add chopped Onion.
  • After 5 minutes, add Ginger and Garlic paste. When all ingredients become light brown than add Turmeric, Red Chili, Coriander and Mango powder.
  • Stir continuously and sprinkle some water and sauté for 5 minutes.
  • Now add Bitter Gourd pieces, sprinkle Salt and stir it continuously.
  • Leave for 10-15 minutes until it begin to caramelize.
  • Switch off the stove and serve with bread.

2) Bitter Gourd with Onion

Ingredients:
  • Bitter Gourd: 1 kg
  • Salt: as required
  • Red Chili Powder: 1/2 tsp.
  • Chop Medium size onion: 1
  • Turmeric powder: ¼ teaspoon
  • Mango powder: ½ teaspoon
  • Cooking Oil: 2 tbsp.

Method:

Wash and dry Bitter Gourd, peeled and cut into slices.

Heat oil in pan and add Bitter Gourd, stir continuously until they are caramelize.

Add chopped Onion, Red Chili Powder, Salt, Turmeric Powder, and leave for 10-20 minutes.

At end, sprinkle Mango powder and serve with flat bread.

3) Stuffed Bitter Gourd

Ingredients:
  • Bitter Gourds: 1kg
  • Cooking Oil: 2 tbsp

For Stuffing
  • Chickpeas Flour: ½ cup
  • Roasted Peanuts: 2 tsp
  • Garlic: 1 tsp
  • Coriander: 1 tsp
  • Ref Chili Powder: 1/2 tsp
  • Turmeric Powder: 1/4 tsp
  • Mango Powder: 1/2 tsp
  • Salt: as required
  • Sugar: 1/2 tsp


Method:
Wash and dry Bitter Gourd, peel off and cut from one side.

Remove seeds with the help of spoon from all Bitter Gourd.

Roasted the Chickpeas Flour for 2 minutes in a pan, than place for cool. After cool down add Garlic, Turmeric Powder, Mango Powder, Sugar, Coriander Powder, Peanuts Crushed or Powder, Red Chili Powder, Sugar, Salt and some Oil in it. Mix all ingredients with the help of spoon, leave it for 5 minutes for better result.

Then stuff mixture in Bitter Gourd with the help of fingers or spoon.

Heat oil in a pan and start to fry stuffed Bitter Gourd in it. Don’t stir it, only change the sides after 2-3 minutes.

Serve with bread or rice.

4) Bitter Gourd Masala

Ingredients
  • Bitter Gourd: 1 kg
  • Salt: As required
  • Cooking Oil: 2 tsp
  • Chop Medium size onion: 1
  • Chop Tomato: 1                                                                                                  
  • Turmeric powder: ¼ teaspoon
  • Red Chili Powder: 1/2 tsp
  • Mango Powder: ½ teaspoon
  • Cumin Seeds: 1 teaspoon
  • Green Chili: 2-3 only


Method:
Wash and dry Bitter Gourd, remove seeds and cut into slices.

Heat oil in a pan, add Cumin Seed, Chopped Onion, Green Chili and still until light brown

Now add, red chili, tomato, and Turmeric powder, salt and mix well all ingredients.

Cook for 5 minutes, then add Bitter Gourd, mix well and sauté for 15-20 minutes.

Serve with bread

5) Achari Bitter Gourd

Ingredients:
  • Bitter Gourd: 1kg
  • Cooking oil: 2 tbsp
  • Jaggary: 2 tbsp.
  • Tamarind Powder: 1/tsp
  • Turmeric Powder: 1/2 tsp
  • Red Chilli powder: 1/2 tsp
  • Coriander Powder: 1/2 tsp
  • Salt: as required
  • Fennel Seeds: 1/2 tsp
  • Cumin Seeds: 1/2 tsp
  • Mustard Seeds: 1/2 tsp
  • Fenugreek Seeds: 1/2 tsp
  • Onion seeds: 1/4 tsp

Method:
Wash and peel off all Bitter Gourd, Cut into slices.

Take Boil water in a bowl, add Bitter Gourd in it, leave for 10 minutes, until water is cool.

Drain water and dry Bitter Gourd. Sprinkle tamarind powder and mash it.

Squeeze all Bitter Gourd and remove extra water.

In pan, heat oil and add Bitter Gourd squeeze pieces. Mix it continuously.

Add left all ingredients and cook on low flame till thick gravy.

Serve with fresh bread.
